dark chocolate & chunky pb bars

Ingredients

base:

- 3/4 cup almond flour

- 1/2 cup coconut flour

- 1/2 cup milled flax

- 3/4 cup chunky peanut butter

- 2 tbsp. maple syrup

- 1/4 cup melted coconut oil (minus what I spilled on myself and the floor)

dark chocolate & pb drizzle:

- 1/2 cup dark chocolate

- 1 tbsp. coconut oil

- 1-2 tbsp. smooth peanut butter (personal preference for chocolate to pb ratio)


How to make it

- combine all base ingredients in a medium bowl

- line an 8x8 baking pan with parchment paper

- once combined, press into lined pan

- place in fridge to set for 10-15 min

- melt 1/2 cup dark chocolate and 1 tbsp. coconut oil together, and coat the base layer with chocolate

- melt 1-2 tbsp. peanut butter and drizzle it on top of chocolate layer, can use a toothpick to create a swirl design or just keep the simple drizzle design

- let set in the fridge for 45 minutes or the freezer for about 20 minutes

- enjoy! store in fridge

Variations

Ooooh many options for variations, I might keep playing with this recipe to create more no bake bars. You could switch up the nut butter used, but I would definitely recommend using a chunky nut butter so you get the crunch from the nuts in the base layer. You could also leave the peanut butter drizzle off the top for a more dark chocolate forward treat. Or you could even do a chocolate chunk version instead of spreading on the chocolate layer.

These gluten free and dairy free no bake bars are the perfect treat to make on a hot summer day. They are a great snack option to satisfy your sweet tooth, or a great dessert for those who need a good gf, df, and vegan treat.
