spiced maple pecan granola

Alright folks, buckle up. I'm comin' at ya with a fall recipe. You might be thinking to yourself 'it's not even labor day yet!!!', but trust me, you're going to be glad I'm sharing this one already. This recipe uses spiced maple pecan butter from a local nut butter company called Humble Nut Butter. I absolutely love exploring new products made by local entrepreneurs, and this nut butter is nothing short of amazing!


Ingredients

- 2 cups rolled oats

- 1 cup chopped pecans

- 1/2 cup pepitas (pumpkin seeds)

- 2 tbsp. sesame seeds

- 1 tbsp. + 1 tsp. maple syrup

- 1 1/2 tbsp. flax meal + 1/4 cup water (or 1 egg white)

- 1/4 tsp. cayenne pepper

- 1/2 tsp. salt


How to make it

- preheat oven to 325F

- in a medium bowl, combine 2 cups rolled oats, 1 cup chopped pecans, 1/2 cup pepitas, 2 tbsp. sesame seeds, 1/4 tsp. cayenne pepper, and 1/2 tsp. salt

- to make the flax egg: combine 1 1/2 tbsp. flax meal with 1/4 cup water and let sit for 5 minutes (skip this step if using an egg white)

- in a small bowl combine 1/3 cup spiced maple pecan butter, 1 tbsp. + 1 tsp. maple syrup, and flax egg (or 1 egg white)

- pour wet ingredients into bowl with dry ingredients, and mix until well combined

- line a baking sheet with parchment paper, and spread granola mixture evenly out on parchment

- bake granola for 25 minutes, stirring 1/2 way through

- let cool before enjoying

- store in an airtight container (can freeze extras to preserve freshness, otherwise lasts about 1 month)
