salted almond maple bites


Looking for a great grab n' go snack option packed with protein, fiber, and healthy fats? You came to the right place! These energy bites are filled with so many great ingredients from my Brandless box (all organic products and $3...how amazing!)

Ingredients (makes about 30 energy bites)

- 3 cups rolled oats

- 1 cup raw almonds

- 1/3 cup milled flax seed

- 1/3 cup chia seeds

- 3/4 cup almond butter

- 3/4 cup maple syrup

- 1 tsp salt

How to make it

- In a blender (or nutribullet) blend 3 cups of rolled oats until they are an oat flour consistency

- Once oats are blended pour into a medium bowl, then blend 1 cup of raw almonds and pour into bowl

- Add milled flax seed, chia seed, and salt to the mixture and combine

- Add 3/4 cup almond butter and 3/4 cup maple syrup to the dry ingredients and mix it all together until you get a doughy consistency

- Roll dough into 1 inch balls and place on a cookie sheet

(tip 1:wet your hands before rolling to prevent the dough from sticking to your hands)

(tip 2: if you feel like the dough is a bit crumbly be patient, the warmth from your hands will help mend the bites together)

- Enjoy one or two right away, or place them in the freezer for about an hour to allow the bites to solidify

- Store in the refrigerator & grab one whenever you need a little snack

For next time...

To add a bit more of a maple-y flavor, next time I want to try adding maple extract. TBH this time I just used the ingredients I had on hand and didn't want to make the trek to the store to buy any!

Variations

There are so many variations to energy bite recipes and so many fun possibilities. I'm thinking about trying some new variations with the remainder of my Brandless rolled oats. I'll share them on here for any of you who are energy bites fans! For this recipe, you could add some chocolate chips or chopped almonds for a bit of a chunky texture. If you are not a fan of chia seeds or milled flax seeds you could leave out one or the other. Additionally, you could substitute another nut butter such as peanut butter or cashew butter for the almond butter.

These energy bites are a great grab and go snack to eat when you need a bit of energy! Just a warning: check your teeth after you eat them because I always find that the chia seeds get stuck in mine (cute!) Hope you all are staying safe in the MN snow, thanks for reading :)
