apple cookies


With the beginning of October and the awesome fall weather we have been having lately, I thought that it was only appropriate to try out a recipe with one of my favorite fall foods: apples. These apple cookies are a great healthy snack option to enjoy this fall. They are easy to assemble, and the opportunities are endless when it comes to personalizing this recipe.

Ingredients

- 1 apple

- 1/4 cup nut butter of your choice (i.e.: peanut butter, almond butter)

- 1/4 cup chopped nuts (i.e.: walnuts, almonds, peanuts, cashews, hazelnuts)

- 1/4 cup oats (I used quick oats)

- 1/4 cup dark chocolate chips



How to make it

- slice apples into pieces about 1/4 in. in thickness

- remove apple core

- spread nut butter on each apple slice

- sprinkle desired toppings on each apple slice

For next time...

I am excited to make these again and try out some different toppings and nut butters. For ideas see the variations below.

Variations

This recipe is great because you can customize it to be whatever combination of nut butter and toppings that you like. Next time I might try melting the dark chocolate and drizzling it on top of the apple cookies to more evenly distribute the chocolate. If you are looking to add some protein and omega 3's to your snack, you could sprinkle chia seeds on top of the apple cookies. If you are looking for a different nut butter to spread on your apple cookies, you could try peanut butter, sun flower butter, or cashew butter. For an extra crunch, you could top your apple cookies with shredded coconut or chopped pretzels.

All in all
