banana oatmeal pancakes


Hey readers! It's been a while since I have posted a recipe. I finally found a slow Sunday morning to try out a new recipe to share with you all. I absolutely love banana pancakes, but I wanted to try out a new recipe with oats. With a little bit of recipe research and some creativity, I came up with this recipe... check it out below!

Ingredients (makes about 10 pancakes)

- 1 and 1/2 cups quick oats (use GF oats if needed)

- 2 medium-large bananas mashed

- 1/2 cup milk of your choice (I used almond milk)

- 3 eggs

- 1 tbsp. honey

- 1/4 cup ground flax seeds

- 1 and 1/2 tsp. baking powder

- 1/4 tsp. salt

- desired toppings (I used chocolate chips and maple syrup)


How to make it

- In a blender, process quick oats until they become a floury consistency

- In a bowl, mix together processed quick oats, 2 mashed bananas, 1/2 cup milk, 1 tbsp. honey, 1/4 cup flax seeds, 1.5 tsp. baking powder, and 1/4 tsp. salt...mix until well combined

- Add 3 eggs to mixture, and combine into batter

- Heat your griddle or skillet up to medium low and melt about 1/2 tbsp. butter on cooking surface to prevent the batter from sticking

- Pour 1/4-1/2 cup of batter onto heated griddle/skillet (if adding chocolate chips in, sprinkle desired amount of chips into the pancake batter while pancake is already cooking in skillet...see picture below!) and cook pancake until the edges look dry, flip and cook 1-2 minutes on the other side

- cook remaining batter and enjoy your pancake breakfast!

For next time...

Yum... these pancakes were absolutely delicious, and easy to make. Next time I might add 1 tsp more of honey to the batter for sweeter pancakes. Also I might try out some fun add ins...see below.

Variations

There are many things you could do to this recipe to create your own favorite pancakes. If you love blueberry pancakes, you could easily substitute the chocolate chips for blueberries. If bananas aren't your thing, you could substitute 1 1/4 cup apple sauce for the mashed bananas. Additionally, if you enjoy cinnamon flavor, you could add 1/2-3/4 tsp. cinnamon to the batter. I enjoyed my pancakes with chocolate chips mixed in and with maple syrup drizzled on top, and it was delicious. Some other topping ideas include butter, honey, fresh fruit, and/or peanut butter.

All in all

I love pancake breakfasts! This recipe is a great healthy alternative to traditional pancakes considering that it doesn't contain any flour, added sugar, butter, or oil. That being said, I'm not going to stop making traditional pancakes anytime soon. Next time you're craving pancakes, give this recipe a shot, and let me know what you think!
