s'mores chocolate chip cookies


These cookies are the perfect summer dessert--a combination of two delicious sweets. You just simply can't go wrong. I made this recipe for the first time about a year ago, and brought them to the cabin up north...let's just say they weren't around for long :) The cookies are basically a chocolate chip cookie recipe with a little twist, so they are super easy to make!

Included in this blog post is the original chocolate chip cookie recipe that my mom and I use all the time. Trust me... you are going to want to write this one down.

Ingredients (makes about 7 dozen cookies)

- 1 cup butter (2 sticks) brought to room temperature

- 3/4 cup brown sugar

- 3/4 cup white sugar

- 2 eggs

- 2 tsp. vanilla

- 2 1/4 cups flour

- 1 tsp. salt

- 1 tsp. baking soda

- 2 cups chocolate chips

(this is the original chocolate chip cookie recipe... for s'mores cookies add the ingredients listed below)

- 1-1.25 cups mini marshmallows

- 1.5 cups crushed graham crackers (about 1 sleeve)

How to make it

- preheat oven to 375 degrees

- cream together thawed butter, sugar, and brown sugar for about 2 minutes

- add 2 eggs and vanilla, mix until well combined

- sift together flour, baking soda, and salt into a separate bowl

- add flour mixture to butter mixture slowly (do not over mix!!)

- mix in chocolate chips, mini marshmallows, and crushed graham crackers until evenly distributed throughout dough

- let dough chill in fridge for an hour (this makes the dough easier to form into cookie shapes)

- line a baking sheet with parchment paper

- form chilled dough into balls about the size of a golf ball and place evenly spaced on baking sheet (I usually do 3 x 4 balls on a 12in x 16in baking sheet)

- bake cookies for about 10 min at 375 degrees

For next time...

The original chocolate chip cookie recipe has been perfected, so there isn't anything to try about this. Next time I make the s'mores cookies, I might trying using 1 cup of crushed graham crackers as opposed to 1.5 cups for textural reasons. that being said, if you want your cookie to really have that s'mores feel, stick with the 1.5 cups of crushed grahams.

Variations

I used mini chocolate chips as my main source of chocolate because I find Hershey's chocolate to be pretty sweet. If you are a big fan of Hershey's, go ahead and use this chocolate to make your cookie even more s'more-like. If you are baking cookies for a large group of people, this recipe is easy to double. This recipe is also great to personalize. With the 4th of July on Tuesday, I decided to bake the chocolate chip cookie recipe with 2 cups of red, white, and blue M&M's as a substitute for the 2 cups of chocolate chips. Check them out :)
