fruity greek yogurt popsicles


After a long weekend of working outside in the hot weather, I thought that popsicles would be the perfect treat on the blog today! As much as I love chocolate, I decided to go more of the fruity route with these popsicles.

For these popsicles, I combined my two favorite fruits, fresh peaches and raspberries, along with some greek yogurt to provide some protein making the popsicles not only a sweet treat but also a healthy snack, too!

Ingredients (makes about 6 popsicles)

- 4 large peaches

- 2 cups of raspberries

- 1 1/4 cup of greek yogurt (any kind of yogurt will work)

- 1 tbsp. honey




How to make it

*I blended up the two fruits separately and then layered them in the popsicle mold. If you want to blend both of the fruits, all of the yogurt, and the honey together for a blended peach and raspberry flavor that works, too (and it would be easier!).

Peach frozen yogurt

- Cut up 4 large peaches and put into blender

- Add 1/2 cup of yogurt to the blender

- Blend until smooth

- Rinse out blender before making raspberry yogurt

Raspberry frozen yogurt

- Add 2 of cups raspberries to the blender

- Add 3/4 cup of yogurt to the blender

- Add 1 tbsp. honey to the blender

- Blend until smooth

- Pour yogurt mixtures into popsicle molds. You can layer the fruits, put them in separate molds, or mix them together depending on the taste and look you are going for.

- Place popsicle molds in freezer for at least 6 hours

- In order to get the popsicles out of the mold, run the mold under hot water for an easier release.

For next time...

I will definitely be making these again. They are so easy to make and you can feel good about eating them. I loved the peach flavor! I am excited to experiment with different fruits and maybe even try dipping them in chocolate and/or sprinkling them with toppings.

Variations

There are many ways to personalize this popsicle recipe with your favorite flavors. Any of your favorite fruit(s) (and maybe even veggies for you health nuts) will work great in this recipe. Additionally, you can play around with the yogurt flavors and types. If you do not own popsicle molds, you could make this into a tub of fruity frozen yogurt and it would be just as delicious. If you are feeling fancy, you dress up your popsicles by sprinkling your choice of nuts on top.

All in all

One thing I love about this recipe is the ability to customize it. Another great thing about these popsicles is that they are only made up of 4 ingredients. The blender and the freezer do most of the work for you, so you can sit back and enjoy the warm weather and then enjoy your cold treats when they are done freezing!
