black bean veggie burgers


For those of you who don't know, I am studying Nutrition at St. Ben's with a concentration in Food Studies and Business. It took me forever to decide my major, but I finally did last spring and I am absolutely loving my choice. One reason why: we get to cook food in class. How awesome is that? This recipe is inspired by the veggie burgers we cooked during class last week. They were delicious so I tried to replicate them at home with a few changes. Check out the recipe below.

Ingredients (makes 5-6 patties)

- 1 (15oz) can of black beans

- 1 cup cooked quinoa

- 1/4 of a yellow, red, or orange pepper

- 1/4 of a yellow onion

- 1 large clove of garlic

- 1 1/2 tsp. cumin

- 1/2 tsp. garlic powder

- 1/4 tsp. salt

- 2 tbsp. olive oil

- 1 large egg

- 1/2 cup of rolled oats

- 1 tsp. Sriracha or desired hot sauce

- buns to serve


How to make it

- Follow instructions on quinoa packaging to cook quinoa

- In a medium bowl, mash drained black beans with a fork leaving some of the beans whole

- Finely chop the onion and pepper

- Mince the garlic clove

- Add quinoa, onion, pepper, and garlic to black beans and combine

- Stir in cumin, garlic powder, salt, and rolled oats

- Add in olive oil, egg, and hot sauce to help bind ingredients together

- Form mixture into 5-6 patties

- Heat butter or olive oil in large skillet to medium heat

- Cook patties until heated through and lightly browned (about 5 min per side)

- Serve burgers on buns or bun-less with desired toppings

- Freeze leftover patties for later

For next time...

This recipe turned out really well, but I did have issues with the patties crumbling when I flipped them. I am going to experiment different ingredients that will help hold the patties together. One solution that helps hold the ingredients together is freezing some the patties before cooking them.

Variations

I'm excited to try out new veggie burger recipes. If you aren't interested in using the oats in your burgers, you can substitute the same amount of bread crumbs. Additionally, you could try playing around with the type of beans used in the patties. Some other ideas include pinto beans, kidney beans, or lima beans. If you want to add some spice to your veggie burgers you could double the amount of hot sauce or add in some chili powder.
