Greek-inspired spaghetti squash

I'm back again with another Greek-inspired dish. I've been meaning to try out a spaghetti squash recipe for a while now, and since I'm still in my Greek salad obsessed stage, I decided to put two and two together!
Ingredients (makes about 4 servings)
- 1 spaghetti squash
Mix-ins
- 1 cup tomatoes
- 3/4 cup cucumber
- 1/4 cup red onion
- 2 oz. goat cheese
- 1/2 cup olives (I used green olives cuz that's just what I have!)
Dressing:
- 2 tbsp. olive oil
- lemon juice from 1 medium sized lemon
- 1 tsp. Greek seasoning (I used Penzey's)
- 2 cloves minced garlic

How to make it
- preheat oven to 375 F
- poke holes all the way around the center of the spaghetti squash lengthwise
- microwave for 5 min (this makes it easier to cut before baking in the oven)
- remove from microwave and let cool before cutting lengthwise along the holes
- once cut, drizzle with olive oil and season with salt and pepper
- bake in the oven at 375 for 40 minutes
- while baking, cut tomatoes and cucumbers into quarters and slice the red onion
- to make the dressing, combine olive oil, lemon juice, Greek seasoning, and minced garlic
- once spaghetti squash is done baking, remove from oven and let cool
- once it has cooled, shred the squash using a fork and toss into a medium bowl
- in the bowl combine the squash, goat cheese, tomatoes, cucumber, red onion, and olives and mix until combined
- drizzle with the dressing and mix once more
- enjoy!

Variations
I absolutely loved the way this turned out, and I am excited to try out variations of this. I might try out an Italian inspired recipe and trade out the Greek seasoning for Italian seasoning, the goat cheese for parmesan, and add in some green peppers. I am also thinking about trying out a spaghetti squash lo mein recipe... yum! I just might have to blog that recipe, too.
All in all
Will my Greek salad obsessed phase ever end? The world may never know... it might just continue until I actually go try real Greek food this summer during my travels to Europe!!
