make ahead breakfast burritos


I absolutely love breakfast; it is by far my favorite meal of the day. I love pancakes, eggs, waffles, biscuits, fresh fruit, bagels...and so many other yummy breakfast foods! That being said, I also love sleep, and sometimes (okay, most times!) I value my sleep over waking up early to make a fancy breakfast. That's what I love so much about today's recipe--make ahead breakfast burritos. They take just 2.5 minutes to cook in the morning (or 4 if you ask my mom).

This recipe comes from my mom. She has been making and eating these breakfast burritos for about 17 years, and out of these 17 years she has eaten them for breakfast almost every morning. That's how good they are! Every few weeks she buys her ingredients in bulk and makes a big batch of burritos. Then she freezes them and cooks them in the microwave each morning for a quick and easy breakfast.

This recipe makes a lot of burritos!! If you want to test out the recipe before making a bigger batch, I would half the recipe or even fourth it.

Ingredients (makes 24 8in tortillas or 30+ 6 in tortillas)

- 5 medium-large onions roughly chopped

- 2 tbsp. butter

- 24 eggs

- 1 pkg. frozen hash browns (30 oz.)

- 3 cans of beans (I used 2 black & 1 kidney)

- 4 cups shredded cheese (I used mozzarella)

- 1 large jar of salsa of your choice (24 oz.)

- 24 large (8 in.) tortillas or about 35 small (6 in.) tortillas

- salt & pepper to taste

- red pepper flakes to taste

- aluminum foil to wrap burritos




How to make it

- soften onions in about 2 tbsp. butter with 2 tsp. salt & 1-2 tsp. crushed red pepper

- crack 24 eggs & whisk together

- pour whisked eggs into onions & add desired amount of black pepper to eggs

- while eggs are scrambling with the onions, dump hash browns, beans, cheese, and salsa into a large bowl & mix together

- once eggs have finished scrambling, add them to the rest of ingredients & mix together

- rip off pieces of aluminum foil into 12in. x 12in. pieces

- place one tortilla on each foil square

- fill tortilla with about 1 cup worth of filling & wrap up

- place wrapped burritos in freezer until ready to use



When ready to eat

- unwrap burrito and place on a plate

- cook in microwave for 2.5 - 4 min (I like mine for 2.5 because the tortilla is softer, but my mom cooks hers for 4 because she likes a crunchier tortilla)

**note: we cook our burritos on paper plates because some of the tortilla often sticks to the plate

Again...my mom has been making these burritos for 17 years, so the recipe has been perfected.

Variations

These burritos are obviously vegetarian, but if you are interested in adding some more protein to the burrito you could most definitely add a breakfast meat of your choice (ex: sausage, bacon, ham). You can also change up the type of cheese and beans used in the burritos, or leave either of the two out. Additionally, if you want to add more veggies, some ideas are spinach, peppers, cooked squash, mushrooms, etc.

All in all

These burritos are such a great option for those who don't have time to whip up a fancy breakfast in the morning (most of us!). They store great in the freezer, and once you make the batch in bulk, the microwave does the rest of the work for you. Another thing I love about this recipe is that the burritos contain very little sugar unlike the sugar filled breakfast cereals and breakfast bars. The lack of sugar will leave you feeling full from breakfast longer and prevent you from becoming hangry :)
