summertime potato salad


Looking for the perfect side dish for your summertime dinner? I've got you covered. This recipe is so easy to prepare and fun to customize! Included in this post is a recipe for potato salad along with ideas to help you spruce up this simple side dish. Making the potato salad without all of the fun toppings and mix-ins is great for those of you cooking for picky eaters! And who doesn't love being able to customize your own dish?

Making this recipe was super fun because my mom and I were able to pick almost all of our toppings and mix-ins from our backyard garden. Talk about eating local!

Ingredients

-2 pounds of potatoes cubed

- 6 hard boiled eggs diced

- 1/2 cup mayo

- 1/4 cup mustard (use one you like...I used seedy)

- 1/4 cup milk

(makes about 1 cup of dressing for 2 pounds of potatoes)

- salt and pepper to taste

- desired veggies and/or herbs to mix in and top dish with (ideas: dill, basil, thyme, oregano, lemon balm, mustard greens, kale, pickled veggies, tomatoes)

How to make it

- cube 2 pounds of potatoes

- fill large pot with water

- place potatoes and 6 eggs in pot

- boil eggs for about 5 minutes and take out of pot to cool

- boil potatoes on medium heat for about 10 minutes or until tender

- while waiting for eggs and potatoes to boil, create dressing

- combine 1/2 cup mayo, 1/4 cup mustard, and 1/4 cup of milk in a bowl

- once hard boiled eggs are cool and peeled, slice them into small pieces

- once potatoes are tender, remove them from water

- add potatoes, hard boiled eggs, and dressing to a bowl and fold ingredients together

- mix in your desired veggies and garnish with your desired herbs


Boil your eggs and potatoes together... some may call it cheating but I think it's genius. (my mom's idea of course!)

For next time...

This recipe is one that my mom prepares for my family a lot in the summer time so there isn't much to be changed. Next time I make it I would love to use fresh potatoes from the farmer's market because I think it would be that much more delicious.

Variations

This recipe is easy to customize, so you can prepare it for the pickiest of eaters and veggie lovers at the same time. Don't like mayo? Substitute oil and vinegar for the mayo. Also, if you prefer to leave out the hard boiled eggs, you may want to add more mayo or milk to the dressing mixture. Although I mentioned mix ins quite a bit, this dish is delicious all by itself.

All in all

This potato salad is a great side dish for a family dinner, or an easy dish to bring to a summer barbecue get together with friends and family. It's a classic dish that is perfect for the summer time. The potato salad is so easy to prepare and the majority of the preparation time is spent waiting for the eggs and potatoes to boil.
